prize at the end of your trip. All meals are as pre-made as can be, frozen and packed into coolers (freezers). Breakfasts can have one of two twists--easy and fast to get off the beach or a bit more cooking to have that breakfast burrito that tastes so good! Lunches are hearty--and have a variety, not just day after day of deli-style sandwiches (though there are several good days of sandwiches). And for dinner I'm not talkin' about a beans and weenies kind of menu--great dinners like Mango coconut curried chicken, buffalo chile, lamb tagine, and pasta puttanesca. Delicious appetizers like peppers Provencale' or guacamole' to keep the hungry mob out of the kitchen while the cooks work their magic. Top the dinner off with plenty of home-baked treats for dessert and you've had dinner at Cocina del Rio !
The bottom line here is that when I am on the river, I am on vacation and I don't want to spend a lot of time in the kitchen--I'd rather be exploring the side canyons or sharing a margarita and watching the sun paint the canyon walls. That is why, at the suggestion of friends who have done many, many Grand Trips with all kinds of menus (including other professionally packed menus) I have decided to make this business a reality.
The nuts and bolts: Frozen foods are packed in freezers, sealed ready to go. Coolers with fresh produce, plus the produce that can go in a cool hatch, are also provided. Day-by day the dry foods are packed in either rocket boxes or prepared so you can stash them in your dry boxes. I've had good luck with 14 days of frozen food, and then we go to dry foods--which, I promise, are the same quality as the frozen.
You can choose how much you want to spend on your food, we'll pack accordingly! For those of you on a budget, we will provide a basic meal plan that is hearty and you'll spend a bit more time in the kitchen; the middle of the road plan gets you a easy to prepare meals with more night of grilling; the top of the line gourmet plan will be the simplest to prepare and a truly unique, tasty menu. Provide your own coolers and rocket boxes and you can reduce your costs a bit, but for a nominal fee we'll outfit those. We deliver to Albuquerque for free, Flagstaff for a bit more and all the way to Lee's Ferry (but not into Grand Canyon Nat'l Park-sorry, we don't have a concessionaire's license!) for a bit more than that!
